Well, science is science. It's used and abused. and covered in a thick layer of myth, pseudo-religion and nepotism, but there's still life somewhere deep inside.
For that matter, Birger Gerhardsson's The Reliability of the Gospel Tradition is a good place to start if you're interested in issues of the veracity of the Church's testimony.
In regard to issues of knowledge and certainty relating to basic classical theism, I think either Edward Feser or Alvin Plantinga are good options. You might like Plantinga's Where the Conflict Really Lies.
